Warm hearty Salad

I guess at this stage you have all figured out my slight addiction to Sweet Potatoe. None the less here is ANOTHER sweet potatoe recipe for you're enjoyment . I think this is a gorgeous dish to have over the Christmas period , People seem to rarely eat salads but its a seriously yummy and healthy option. 


Ingredients :

1 large Sweet potatoe peeled and cubed 
2 Teaspoon olive oil 
One large bag of mixed leave salad or spinach
2 shallots 
50g Whole Pecans

2 Tablespoons Extra virgin olive oil
1 Tablespoon Balsamic vinegar
1/2 teaspoon Paprika  
1/4 Teaspoon Dijon mustard
1/2 Teaspoon maple syrup 
Pinch of Salt
Pinch of Pepper 


- Sprinkle two teaspoons of olive oil over sweet potatoe 
- Bake the sweet potatoe on a dish in the oven for about 25 minutes at 160 degreed 
  until golden .
- Toss in the pecans for a further five minutes in the oven.
- Lightly caramelize the shallots in a pan.

Whisk together all the Dressing ingredients .

Place the salad leaves in a large serving bowl , evenly toss the Sweet potatoe, Pecans and Onions though the leafs. Lastly drizzle over the dressing and serve .

Serves two people and contains 475 calories .
You can also spruce this salad up by adding a little bit of feta cheese or Bacon pieces but obviously the calories would be much higher
