Mash potatoe with a twist
Yes we are all farmiliar with our friend the mash pototoe, unfortunately white potaote is full of starch and mashed potaotoes typically are laced with Milk, Butter and Salt. Here is a much healthier mashed potaoe with a sweet twist. Only 200 Calories per serving and made with one of the world's healthiest happiest carb, Mr Sweet potatoe !
I have always had this weird obsession with Sweet and savory so as you can imagine i adore this recipe, be open minded and give it a try. Also a very warming festive dish that you could serve with you're Christmas dinner. This is also suitable for vegetarians and Vegans wooo.
Ingredients
3 Large sweet potatoes
3.5 Tablespoons of Maple syrup
1/4 cup of toasted Pecan Nuts
2 Tablespoons of Olive oil
1/4 teaspoon freshly grated Orange zest (Optional)
Directions :
-Peel the sweet potatoes and chop into even squares.
-Boil in a pot of water for approximately thirty minutes until they are cooked fully.
-Drain the water
-Using a potatoe masher, mash the sweet potoaoe into you're perfect texture, i prefer smooth -with no lumps, but it is entirely up to you.
-In the pot mix in Both the Olive oil, Maple syrup and the Orange zest until evenly distributed.
-Place the mash potaotes into a casserole dish and bake in a preheated oven for Thirty five minutes at 190 degrees.
-Sprinkle the pecan nuts over the mash once you are ready to serve.
Toasted pecans are very easily made
Cover a baking tray in tinfoil
Place the 1/4 cup of pecans on the tray
Sprinkle over two teaspoons of Olive oil
Bake for five to seven minutes until nuts smell aromatic
