Kelly's Healthy Italian stew
In a large saucepan, cook onion, celery, carrot and garlic in olive oil for 5 mins until softened and turning golden. Tip in the beef , Butternut squash, tomatoes and herbs, then add water and bring to the boil. Add the balsamic vinegar then Simmer for 15 mins until the meat is cooked through. Cook on a very low heat for 40 minutes or more .
Serve with a side of rice or sweet potatoe mash..
Also don't forget to sprinkle on your olives if your an olive fan
